CHRISMONT Pinot Noir 2018
This inaugural release Pinot Noir is the latest addition to the Chrismont stable of classic European varietal wines. It is a light, refreshing and silky wine that embodies the cool climate and long growing season that epitomizes the upper King Valley - the home of Chrismont.
COLOUR: Light cherry red.
AROMA: Strawberry, cranberry and cherry fruit with a hint of white pepper.
PALATE: Red fruit flavours with bright acidity combine together in its silky palate where hints of chocolate and walnut are present from the oak. Finishes light, refreshing and persistent.
“The fruit is harvested by hand and then crushed into an open red fermenter as 75% crushed and destemmed and 25% left as whole bunches. Yeast is then added and fermentation is allowed to proceed slowly for seven days on skins before being drained and gently pressed to hogsheads (30% new). Both primary and malolactic fermentation is finished in barrel then racked to older barrels for maturation of up to nine months, before being bottled no later than 12 months.” Warren Proft, winemaker
